High Protein Carrot-Banana Bread with healthy frosting

Prep Time: about 10 minutes I Baking Time: 60 minutes

Perfect afternoon snack or breakfast! It is without refined sugars, high in protein and super juicy – PLUS quick and easy to make πŸ™‚

WHAT YOU NEED:


1-2 ripe medium size bananas

2 – 3 medium size carrots

100ml unsweetened natural apple sauce

250g of low fat curt cheese (German: Quark or Magertopfen)

2 servings of vegan vanilla protein powder (optional – otherwise add more whole wheat flour)

3 tbsp of whole wheat or almond flour

2 tbsp of raisins (optional – makes it a bit sweeter)

1 pkg baking powder

tiny bit of salt

1 tbsp ground ginger


FOR THE FROSTING

150g curt cheese

150g (Albro) Soy Yoghurt or a few ml of Soy Milk

Squeeze of lemon juice

(PS: Please note, I have a small baking form so you may have to double the ingredients!)

First you can start preheating the oven to 350F or about 180 degrees celsius.

In a big bowl put the two bananas and apple sauce and mash them together. Shred the carrots in a blender and add them together with the ground ginger to the batter. Afterwards stir in the curt cheese.

Add dry ingredients like flour, protein powder optional, baking powder and salt together and blend them well. Mix it to the wet bowl and combine the whole batter until its smooth and well blended. If you want you can add raisins to make it a bit sweeter.

Put the batter in a loaf pan and bake it for about 60 minutes until it has a nice gold brown color. (Maybe check after 50 minutes) Allow the bread to cool before you remove it form the pan. Serve it with the healthy frosting πŸ™‚ Just blend all ingredients together and spread it on top of your cake piece.
