The saddest moment for me is, when I don’t have yummy juice banana bread in my fridge. Ahhh! I just LOVE it! And the best, with fruit jam or honey on top! Super quick and easy to bake, so I thought I’d share this delicious recipe with you.

Baking Time: 45 minutes | 190 degres oven heat| Preparation: 10 minutes
WHAT YOU NEED
- 3 ripe bananas
- 100ml of almond milk
- 2 eggs (or egg replacement powder with water for vegan)
- 3-4 spoons of maple syrup (or any zero calorie sweetener)
- around 150ml apple sauce
- a hand full of dried figs or dates (or any dried fruits you prefer)
- 1 big table spoon of coconut oil
- 2 cups of wheat flour (or mix 1/2 with vegan protein powder)
- 1 package of baking powder
- 1/2 cup of grounded nuts (I prefer walnuts or almonds)
- 1-2 tea spoons of cinnamon
(Please note, I have a small baking form, so you may double the ingredients!)
Preheat the oven to around 190 degrees and lay out the baking form with parchment paper.
Combine all the dry ingredients together till its well mixed and put it aside. Put the bananas and almond milk in a smoothie blender and blend until is nice and creamy. Or if you like the banana bread more chunky smash them with a fork. Add all other wet ingredients and the dried fruits to it and stir with a spoon until everything is well mixed. Last step is to mix everything together and fill the baking form with the dough.
Little tip: The dough should be “more wet” and a bit sticky and not too dry. Don’t overbake the banana bread, if you want it juicy. I usually turn off the oven after 50min and let the banana bread cool out in the oven with the oven door open! Or just put it completely out and let it fully cool. 🙂 Make sure to make the test with a cooking needle – stick the needle in the cake and there should be no wet dough sticking on it!
Let me know how yours turned out! My favorite tip is to either spread peanut butter or honey/maple syrup on top or heat the banana bread up in a microwave for about 20 seconds! So good! 🙂 For storage keep it in the fridge in a closed box with a lid and it will last for a couple days.
