Healthy fluffy Lemon-Mango Cheesecake

 I hadn’t really made anything featuring lemon lately, so I thought it was about time to make a  healthy, fluffy lemon cheesecake – full of protein! Its super easy to throw together and with just a few ingredients you will have a delicious treat that you will definitely love! 😉

Baking Time: 45 minutes | 190 degrees oven heat| Preparation: 5-10 minutes

  • 2 eggs (or vegan egg replacement)
  • 500ml Vanilla Soy Yoghurt
  • 250g low fat curt cheese (or instead 250ml Vanilla Soy Yoghurt for vegan option)
  • 1 cup of whole wheat flour (or 1/2 mixed with vanilla protein powder)
  • 1 package of vanilla pudding powder
  • 1/2 package of baking powder
  • little bit of Xylt (or Maple Syrup)
  • Squeeze of a lemon (like 2 table spoons of lemon juice)
  • little bit of almond milk
  • Optional: Fruits for topping (I used frozen mango)

Preheat the oven to 190 degrees (350 Fahreinheit) and lay out the baking form with parchment paper.

Combine all the wet ingredients together till its well mixed and in a separate bowl mix all the dry ingredients. And here is already the last step: Blend everything together till is a nice, wet dough! Fill the baking form and top it up with your favorite fruits! 🙂

Little tip: Don’t overbake the cheesecake, if you want it fluffy. Let it fully cool or the best is if you put it in the fridge!
