What’s your favorite ice cream flavor? Everytime someone asks me that I say „lemon“ and this since many, many years! I just love the soury, fresh flavor! And so do I with lemon cakes, especially in spring/summer for some extra summer feeling! 🙂 Here is a new vegan lemon-mandarin cake, which I made the first time and I think it turned out pretty delicious!
Baking Time: 30-40 minutes | Preparation: 15 minutes
WHAT YOU NEED:
- 1 cup whole wheat flour
- 1 package of vanilla pudding powder
- 1/3 cup of birch sugar (or any kind of other “healthy” sugar)
- 200ml apple sauce
- juice of 2-3 lemons
- 1 package of baking powder (around 1 table spoon)
- 150ml water
- 20ml natural oil (like coconut oil)
- canned/fresh mandarins or any kind of other fruit
- around 20ml lemon juice
- 150grams of powdered sugar
Start preheating the oven to 210 degrees and lay out your form with parchment paper! (PS: I have a smaller one/ perfect for 2 people! So may double amount if you have a big cake form) Mix in a bowl all the dry ingredients together and in another bowl all the wet ones. Take your electric mixer and slowly add the wet ingredients to the other mixture until everything is well blended. Poor the dough into your baking form and bake for around 30-40 minutes until the top is slightly brown. TIP: Don’t overbake the cake, so it doesn’t get too dry!
Finally, the best part! 🙂 Drizzle the cake with a lemon icing, which adds a pop of intense lemon flavor to every bite. Yummm, love that!
Let the cake fully cool before you top it with the icing! Mix the powdered sugar together with the lemon juice for the icing. Lay out the mandarins or the fruit you choose over the cake and spread the lemon icing on top! If you want you can also do it the other way round, I realized that might look prettier but it was already too late! 😉
Cake tastes better if you let if cool for a couple minutes in the fridge! 🙂 Enjoy baking!
