Sooo, I have this thing with chewy muesli bars, granola bars, bliss balls kind of snacks! haha Can’t get enough of them and could basically eat them 24/7. And for everyone else who knows me, knows that I like to know exactly whats in my food! 😉 This is my easy-to-go staple muesli bar recipe and I promise you’ll love them! Simple ingredients, healthy, easy to make and soooo yummy!
Baking Time: 15 minutes | Preparation: 5-10 minutes | Total time: 20-25min
WHAT YOU NEED:
- 100g oats
- 100g buckweat
- 15g of flour (any type of flour)
- 100g dried fruits (in my case I used dried cranberries)
- 20g coconut flakes
- Optional: Spoon full of small nuts, seeds, etc.
- 300ml apple sauce
- 3-4 spoons of maple syrup (or honey if not vegan)
- 1-2 spoons of coconut oil
Preheat the oven to 170 degress and get a baking pan ready with parchment paper.
Mix in a bowl all dry ingredients together. Then put in a pot the maple syrup and coconut oil together and quickly make it warm over the stove so its very liquid. Add the apple sauce into the pot and stir well.
Now combine all the ingredients together and mix it until you get a nice, chewy texture of the dough. If you need more liquid then add a bit more apple sauce or honey, otherwise just add maybe a bit more of the flour or oats. (rather less buckwheat since its more chunky and it won’t stay together when you cut them)
Spread the mixture on the baking pan in a square and like a finger thick high. Now put it in the oven and let them bake for about 10-15min. Don’t overbake them, rather less and just a little bit brown on the top.
Very important: cut them while they are still hot or warm, otherwise they will break 😉 Now enjoy and maybe send me a picture of your healthy snacks! 🙂
