Who does not love a traditional New York Cheesecake ? Plus with a healthy berry topping? Yummm! I could not stop eating the raw filling haha oops! It is super easy to bake and not to forget to mention, its vegan =)

Baking Time: 60 minutes | Preparation: 20 minutes
INGREDIENTS
For the bottom:
- 300 grams flour
- 120 grams vegan margarine (ie. Earth Balance)
- 70 ml maple syrup (or any zero calorie sweetener)
- 1 pkg baking powder
- 3 -5 tbsp water
For the filling:
- 700 ml (Albro) Soy Yoghurt Natural
- 120 grams vegan margarine (ie. Earth Balance)
- 40 grams of corn starch
- 70 ml maple syrup (or any zero calorie sweetener)
- fresh lemon juice
- fresh lemon peel
For the topping:
- (frozen) mixed berries
- 1-2 tbsp maple syrup (or any zero calorie sweetener)
- lemon juice
For the bottom, mix all ingredients together till you get a nice ball of dough. Take a round baking form for the cheesecake. Cut out a circle from an parchment paper for the bottom and cover the sides of the form with a thin layer of margarine. Preheat oven to 180 degrees. With your hands and fingers press the dough into the pan, as well up on the sides for a “wall”.

For the filling, mix all ingredients together will you get a nice, smooth, well-blended texture. Fill it into the baking form and put the cake in the oven for about 1 hour.

Meanwhile, you can prepare the topping and blend the berries, lemon juice and maple syrup till you get a nice berry sauce. Let the sauce trip through a strainer, so all the pits and seeds are removed.
